MOST of us all at some point have used Philadelphia cream cheese, and we have a couple of Christmas recipes for you to try.

Philly Turkey and Leek Pie

Serves: 6

Cook time:: 25 minutes

Ingredients

375 g ready made short crust pastry sheet
150 g Philadelphia Light
1 tsp dried tarragon
225 g cooked sliced leeks
225 g cooked turkey meat, cubed
black pepper to taste
1 tbsp milk to glaze

Instructions

1.Using a 1 litre pie dish, unroll the pastry and cut 3 x 2cm strips from one end. Use these to edge the top of the pie dish. Dampen with a little water.
2.Mix the Philly with the tarragon, add the leeks, turkey and pepper and mix well. Pile into the centre of the dish and top with the pastry sheet, press the pastry edges well together and crimp. Using a knife remove the excess pastry and use it to cut out some holly leaves to decorate the top of the pie. Make a hole in the centre for the steam to be released and brush the pastry with milk.
3.Place onto a baking sheet and cook in a preheated oven, Gas 6, 200 C for 20-25 minutes until golden. Serve with seasonal vegetables.

Tips Try using a mixture of leftover turkey and ham.

Apple & Mincemeat Layer

Ingredients

half a 375g pack ready rolled puff pastry
2 apples, cored and sliced
2 tbsp icing sugar, to sweeten
150 g Philadelphia Light
200 g jar mincemeat
ground cinnamon or icing sugar, to dust

Instructions

1.Cut the pastry into 6 rectangles and place on a non-stick baking tray. Bake at 200°C, 400°F, Gas Mark 6 for 15- 20 minutes or until golden brown. Cool slightly and slice in half length ways (to form tops and bottoms).
2.Lightly grease a small non-stick pan. Place the apples in the pan and sprinkle with a little icing sugar. Cook over a low heat for about 4 -5 minutes until they start to soften.
3.Mix together the Philly and icing sugar and spread evenly over the three bottom pastry halves. Warm the mincemeat in a pan, spoon it over the Philly and top with the warm apple slices and remaining pastry tops. Dust with ground cinnamon or icing sugar.
