IF the sleepy, unassuming Shropshire town of Ludlow is the foodie Mecca of the Midlands, Fishmore Hall is surely the shining jewel in its crown.

This privately-owned boutique hotel, with its 15 individually styled rooms, remains small enough to maintain its cosy, family friendliness, but punches way above its weight when it comes to fine dining.

A beautifully and sympathetically restored Georgian house, overlooking vast swathes of rolling countryside down to the town of Ludlow, Fishmore Hall straddles the dual territories of the feel of a high-class, exclusive establishment and the warm welcome of a little family-run guest house – no mean feat in itself.

All 15 rooms boast their own unique features, including magnificent wet room bathing facilities and plush, thoughtfully furnished sleeping areas, so you can tailor your choice to your own individual preference and comfort.

But it’s in the Forelles restaurant where Fishmore really stands out from the crowd.

Under the wing of exciting young chef Andrew Birch, the emphasis is upon fresh, local, seasonal ingredients, prepared with flair and innovation. Andrew, previously senior sous chef at the 3A rosette and Michelin-starred Montague Arms on Hampshire already basks in the glory of a string of prestigious awards – Welsh Chef of the Year (2004), Young Chef Apprentice of Britain (2005), Young Chef Apprentice of Europe (2005) and a finalist in the coveted Roux Regional Scholarship (2006). More are sure to follow.

The menu is constantly changing to reflect what’s best in season, but you can expect the likes of perfectly seared scallops and prime cuts of wild venison, with Andrew’s deft touches in preparation – the bay leaf infused ice cream, in particular, is one of the standouts you’re not likely to forget, ditto the salted caramel fondant.

In addition to the mouthwatering a la carte menu, there are also six-course and nine-course tasting menus to really tantalise your tastebuds – the choice is pretty much endless.

Anyone who is a lover of fine food will, in turn, love the Fishmore Hall experience – in reality there’s nothing not to love.
